Both date and time is actually already stored in the Delivereddate field, but only the date part is displayed in the Inbox Date column. To change this column to also display the time, simply go to the ($Inbox) folder design (in the user mail database or the design template), and enable the "display time" checkbox in the column format (fourth) tab of the column properties dialog.
